If you’ve looked at any of my meal plans, you’ll notice that zoodles (zucchini noodles) are at least on the menu once a week– especially using the 22 Minute Hard Corps program since you want to try to limit carbohydrates at dinner time. I love finding creative ways of incorporating vegetables in creative ways and zucchini is one of my favorites. It is a great source of manganese and vitamin C, and is a great source of dietary fiber that will keep your body in the best shape for the long run. It also contains vitamin A, magnesium, folate, potassium, copper, and phosphorus!
If you’re looking for a healthy, simple, and delicious addition to your meal plan– you should give these a try! They can substitute for almost any noodle and you can use a spiralizer or even a potato peeler! You simple peel/spiralize the zucchini and steam, saute, or eat them raw depending on how you are preparing them! They only take a few minutes and are great for those busy nights when you need dinner to come together quickly, or you are trying to find creative ways to incorporate veggies into your toddler’s diet!
